Basic Carrots and Parsnips
Equipment
- cutting board
- knife
- roaster
- oven
Ingredients
- 2 lbs carrtos
- 2 lbs pasnips
- 1-2 tbsp oil I use canola oil because of it's high smoke point but you can use whichever oil you prefer
- 1 pinch salt
- 1 tsp dried rosemary I prefer rosemary broken or ground if you prefer it whole, increase to 1.5-2 tsp
- 2 tbsp liquid honey
Instructions
- Preheat oven to 400 degrees Fahrenheit
- Peel carrots and parsnips and chop them to approx 1/4 inch "cubes" (could be larger, just increase cooking time)
- Put carrots and parsnips in roaster and drizzle with oil and salt
- Toss to combine
- Cook in oven for 30-40 minutes, stirring every 10-15 minutes
- Toss vegetables with honey and rosemary
- Cook in oven for 10 more minutes (optional)
- Enjoy!
