Basic Carrots and Parsnips


  • cutting board
  • knife
  • roaster
  • oven


  • 2 lbs carrtos
  • 2 lbs pasnips
  • 1-2 tbsp oil I use canola oil because of it's high smoke point but you can use whichever oil you prefer
  • 1 pinch salt
  • 1 tsp dried rosemary I prefer rosemary broken or ground if you prefer it whole, increase to 1.5-2 tsp
  • 2 tbsp liquid honey


  • Preheat oven to 400 degrees Fahrenheit
  • Peel carrots and parsnips and chop them to approx 1/4 inch "cubes" (could be larger, just increase cooking time)
  • Put carrots and parsnips in roaster and drizzle with oil and salt
  • Toss to combine
  • Cook in oven for 30-40 minutes, stirring every 10-15 minutes
  • Toss vegetables with honey and rosemary
  • Cook in oven for 10 more minutes (optional)
  • Enjoy!
