Roasted Turnips and Radishes with Herby Green Sauce

  • Measuring cups and spoons
  • 16 oz radishes (about 16-18 radishes)
  • 3 turnips (about 2-3 inches in diameter)
  • 1 tbsp oil (I use canola oil but use whichever oil you prefer)
  • salt (to taste)
  • 1 green onion (garnish and to taste)

sauce

  • 1/8 cup mayo
  • 1/2 tbsp honey
  • 1/2 tsp thyme
  • 1/4 tsp sage
  • pinch ground black peppper (to taste)
  1. heat oven to 400 degrees Fahrenheit

  2. peel turnips if needed/preferred

  3. cut off the root and stem ends of the radishes and turnips

  4. dice radishes and turnips into approximately 1/2" – 1" pieces (cooking time will vary depending on size)

  5. toss with 1 tbsp oil

  6. spread out on baking sheet

  7. roast in oven for 20-30 minutes, flipping every 10 minutes

  8. sprinkle salt over cooked vegetables

  9. cut green onion thinly and sprinkle on cooked vegetables

make herby green sauce

  1. mix together mayo, honey, thyme, sage and black pepper

  2. serve sauce on the side or drizzle on top
