Beet Strings
Spiralized beets, sauteed and finished with a dressing
Equipment
- spiralizer or grater
- frying pan
- serving dish (optional)
Ingredients
- 8 small-medium beets amount is flexible
- 1 tbsp oil I used canola oil but any high temp oil is great
- 2 tbsp red wine vinegar
- 2 tbsp maple syrup
- 1 tsp whole grain mustard
- salt and pepper to taste
- parsley for garnish
Instructions
- Peel beets and spiralize or grate using largest holes
- Heat frying pan on medium heat, add oil
- Add beets to frying pan and cook about 10 minutes until soft (not mushy)
- Transfer beets to serving dish (optional)
- Mix together red wine vinegar, maple syrup, mustard and salt and pepper
- Pour over beets
- Garnish with parsley (if desirable)
- Enjoy!
