Beet Strings
Spiralized beets, sauteed and finished with a dressing
- spiralizer or grater
- frying pan
- serving dish (optional)
- 8 small-medium beets (amount is flexible)
- 1 tbsp oil (I used canola oil but any high temp oil is great)
- 2 tbsp red wine vinegar
- 2 tbsp maple syrup
- 1 tsp whole grain mustard
- salt and pepper (to taste)
- parsley (for garnish)
Peel beets and spiralize or grate using largest holes
Heat frying pan on medium heat, add oil
Add beets to frying pan and cook about 10 minutes until soft (not mushy)
Transfer beets to serving dish (optional)
Mix together red wine vinegar, maple syrup, mustard and salt and pepper
Pour over beets
Garnish with parsley (if desirable)
